Christmas Day 2010

Our family holiday celebrations have dwindled, not the number of holidays, but the number of people. First we lost Carrie and the Koehmstedts to North Carolina; then my Mom to Oregon; so we are down to 4. This year one of Sharon's friends, Kimberly, invited we 4 to her Christmas dinner. Sharon specifically requested I bring this salad, so I thought I'd share the recipe. I'm also bringing my Corn Casserole. Kimberly's mother-in-law, who lives with her, is making homemade tamales. Can't wait!

Last night Sharon and Oden had a sleep-over, here. We've had a great morning.


Pear Salad

1 Bartlett pear, thinly sliced
2 bags of Triple Heart Salad greens
1/2 cup crumbled Blue Cheese
1 cup dried Cranberries
1 cup glazed Walnuts
Pear Vinaigrette Dressing, recipe below

Toss all ingredients in a large bowl. Serves 10 – 12.

Pear Vinaigrette Dressing

½ cup Extra Virgin Olive Oil
½ cup Pear Vinegar
¼ teaspoon Salt
1/8 teaspoon pepper

Put all ingredients in small container, cover and shake to mix well.

  1. Thanks for the recipe Jan. Right up my alley. Where do you find pear vinegar? Or, do you season your own? I need to try that one soon. I swear I need to be on a water-only diet for a month.
